Pumpkin Chili Topped with Over-Easy Eggs

Ingredients
  

  • 2 eggs
  • 2 cups pumkin chili meal prepped ahead of time

Prep Your Pan for the Eggs

  • Heat: Put the pan on medium heat and let it warm up for 1-2 minutes
  • Olive Oil: Place a layer of olive oil on the pan
  • Wait another 1-2 minutes until the olive oil gets less thick and is easy to move the pan around so it coats the entire bottom of the pan. If there's too much, you can drain the excess off. You want it coating the entire bottom of the pan so the eggs won't stick to it.

Egg Time

  • Crack the eggs carefully into the pan.
  • Let one side cook for about 2 minutes, until the outer edges of the egg start looking a little crisp the egg whites are looking more solid.
  • Now, flip the egg, and let it cook for about 30 seconds to 1 minute to let the top of the egg get a nice layer sealing in the yolk, and cooking the yolk a little bit so its not totally runny.

Place on top of the Pumpkin Chili

  • Warm up the pumpkin chili you made during your meal prep session or dinner last night. Stove or microwave works.

EAT YOUR FOOD!

  • Plate it to look delicious and add some salt and pepper on top of the eggs. Now you can enjoy!
